Ceylon Cinnamon: Known as "true cinnamon," Ceylon cinnamon comes from the inner bark of the Cinnamomum verum tree, native to Sri Lanka. It has a delicate, sweet flavor with subtle citrus and floral notes, making it perfect for desserts, baked goods, and teas. Unlike the more common Cassia varieties, such as Kojita or Vietnamese cinnamon, Ceylon cinnamon has a softer texture, lighter color, and lower coumarin content.  Kojita and Vietnamese cinnamon (Cinnamomum cassia) are stronger, spicier, and more robust, with a deeper color and bolder taste, making them ideal for savory dishes and recipes that need a more intense cinnamon flavor.
