The combination of herbs in Herbes de Provence offers a harmonious balance of flavors. I was inspired by my visit to the sunny landscape of Southern France, dining in cafes on the streets of Nice and smelling the herbs in the air on the mountain sidewalks of Grasse. The thyme brings a delicate earthiness, rosemary contributes a robust and pine-like aroma, savory adds a peppery note, marjoram provides a mild sweetness, and oregano adds a touch of pungency. The addition of lavender flowers imparts a subtle floral nuance that adds a unique Provencal touch to the blend. Try in stews, coq au vin, potatoes, fish, lentils, soups, pasta, salmon, and salads.
