Unlike Ceylon cinnamon, which is milder and sweeter, Vietnamese cinnamon has a deeper color, a coarser texture, and a higher concentration of coumarin, which contributes to its distinctive, warming kick.This cinnamon is the strongest, richest cinnamon. With a 4 % oil content you will need less cinnamon compared to common cinnamon.
