This is one of those easy dips worth keeping in your back pocket. Sweet corn, fresh peppers, a little heat, and a creamy lime dressing come together with Caliente Lime Seasoning for a dip that’s bright, zesty, and seriously scoopable.
When fresh corn is in season, I love using cooked corn right off the cob. The rest of the year, frozen corn works beautifully—just cook it, let it cool completely, and you’re ready to go.
Serrano or Anaheim pepper, red bell pepper, and Hatch chiles give the dip layers of fresh pepper flavor and just the right amount of heat. If you want more heat, just add pickled jalapeños. Sour cream and a little mayonnaise make it creamy, fresh lime juice brightens everything up, and Caliente Lime does the rest.
Stir everything together, tuck it into the refrigerator to chill, and that’s it.
And while you could serve it with tortilla chips, I’m going to tell you what I use: Fritos. That salty crunch with the sweet corn, creamy lime dressing, and little kick of heat is just plain good.
