Ingredients
For the Chicken
2 cups finely chopped rotisserie or poached chicken
For the Dressing
½ cup mayonnaise
1 Tbsp Dijon mustard
1 tsp fresh lemon juice
1 Tbsp Creole Kiss seasoning
For the Mix-Ins
4 Tbsp finely chopped red bell pepper
4 Tbsp chopped celery
3 Tbsp chopped pickled okra
2 Tbsp chopped pickled jalapeños
2 Tbsp chopped piquillo peppers
Directions
Prep the Chicken
Finely chop the chicken and place in a large mixing bowl.
Make the Dressing
In a small bowl, mix mayonnaise, Dijon mustard, lemon juice, and Creole Kiss seasoning until smooth.
Prep the Mix-Ins
Finely chop all vegetables and pickled ingredients.
Combine
Add dressing and mix-ins to the chicken. Stir until fully combined. Chill before serving.
Serve
Serve on bread, with crackers, celery sticks, or crisp green apple slices.
