No recipes. No stress. Just smart cooking.
Some nights, dinner needs to be easy.
Other nights, it needs to stretch.
This week, we cooked one simple baked salmon—and let it do the work for three completely different meals. No complicated planning. No rigid recipes. Just good ingredients, seasoned well, and cooked with intention.
That’s the heart of It’s Simple — The Fennel & Fire Way.
Night One: Simple Baked Salmon Dinner
We started with a sheet pan:
-
Salmon rubbed with Perfect Salmon
-
Thin lemon slices on top, baked at 350 until flaky.
-
Sides seasoned two ways:
-
Couscous with Veggie Heaven
-
Broccoli, steamed in the microwave, then finished with Citrus Peppercorn
-
That’s it. Balanced, bright, healthy—and done.
Night Two: Turn Dinner Into a Salad
The next night, we chopped the leftover salmon and built a hearty salad:
-
Salmon
-
Crispy bacon
-
Hard-boiled eggs
-
Dried corn or fresh corn
-
Peppers, squash or whatever vegetables are in the fridge
- Balsamic Vinaigrette
Same protein. Totally different feel.
Night Three: The Best Salmon Sandwich
What was left became a crave-worthy sandwich:
-
Salmon filet
-
Lemon aioli (I like Stonewall Kitchen) or make your own
-
Toasted bread
-
crispy shredded lettus
Three nights. One cook session. No boredom.
The lesson
You don’t need new recipes every night.
You need good seasoning and permission to reuse food creatively.
Cook once. Think loosely. Let flavor guide you.
Dinner doesn’t need rules — just confidence.
