Cook the bacon. Set oven to 400°F. Arrange the bacon on a parchment-lined baking sheet and bake for 18 minutes from cold oven, or until crisp. Transfer to a paper towel-lined plate.
Prepare the sauce.In a small bowl, whisk together the mayonnaise, ketchup, Grilling Blend, Worcestershire sauce, and hot sauce. Refrigerate until ready to serve.
Season the burgers. Gently mix 1 tablespoon of Grilling Blend into the ground beef. Divide into four equal portions and shape into patties about ¾-inch thick, pressing a slight dimple into the center of each. Sprinkle the remaining tablespoon of Grilling Blend evenly over both sides of the patties.
Cook the burgers. Grill or Cast-Iron. Cast-iron method: Heat a cast-iron skillet over medium-high heat until very hot. Sear the burgers for 2–3 minutes per side to develop a flavorful crust. Transfer the skillet to the 400°F oven and cook for an additional 5–7 minutes, or until the burgers reach your desired doneness (130–135°F for medium-rare, 140–145°F for medium).
Add the cheese.During the final minute of cooking, place a slice of smoked Gouda on each burger and allow it to melt.
Rest the burgers.Remove the burgers from the oven and let them rest for 5 minutes. Finish with a light sprinkle of Grilling Blend.
Toast the buns.While the burgers rest, toast the cut sides of the buns in the hot skillet until golden brown.
Assemble.Spread Smoky Grilling Sauce on the top and bottom buns. Layer with lettuce, the burger, bacon, tomato, red onion, and the toasted top bun. Serve immediately.
Recipe Note
Restaurant Tip: place lettuce on the bottom of the burger. It acts as a barrier between the juicy patty and the bun, helping keep the bun from getting soggy—a little restaurant trick that also makes the burger easier to eat. Photography Tip: Lettuce always looks best on top!
