When winter winds blow, these buttery, spiced grahams bring instant comfort. Crisp honey graham crackers are bathed in a bubbling mixture of brown sugar, butter, and warm Fennel & Fire spices — baked until golden and caramelized. They’re sweet, a little salty, and impossibly addictive. Perfect for sharing with friends or gifting in festive bags tied with twine.

Ingredients

Sheet pan of graham cracker broken into squares

1 cup (2 sticks) unsalted butter ( European high fat)
- 1 cup light brown sugar, packed

2 tsp Winter Spice Blend

1 tsp vanilla extract (optional)

Pinch Fennel and Fire Fire Salt
Directions
Preheat & Arrange: Preheat oven to 350°F. Line a rimmed baking sheet with parchment or foil. Arrange graham squares in a single layer, edges touching.
Make the Caramel: In a saucepan, melt butter and brown sugar over medium heat, stirring until bubbly and smooth, about 2-3 minutes.
Flavor It: Remove from heat; stir in spice blend and vanilla (optional).
Coat & Bake: Pour the hot mixture evenly over the grahams and spread gently. Bake 10–12 minutes until the glaze is bubbling and edges are golden.
Remove from Oven: Sprinkle with a little Fennel and Fire Fire Salt.
- Cool & Break: Let cool 5–10 minutes, then slide onto parchment to set before breaking into pieces.
Recipe Note
Use a high fat European Butter for best results.
Add a teaspoon of vanilla while adding the spice blend for extra flavor.
Serve with a hot cup of Spiced Chai or Mulled Tea
